 320 g PastaPenne or Fusilli
 3 Medium sized zucchinis
 250 g Cherry Tomatoes
 1 Garlic clove
 1 Hot Pepper
 Salt and black pepper, to taste
 Parmigiano Reggiano (optional)

Wash the zucchinis and cut them into cubes. Wash the cherry tomatoes and cut them in half.

In a large pan, heat 3 tablespoons of extra virgin olive oil along with finely chopped garlic and chili pepper (if using). Alternatively, you can use the delicious Antonacci Garlic and Chili Flavored Extra Virgin Olive Oil (find it here).

Add the zucchinis to the pan and cook for about 10 minutes until they are soft and slightly golden. Add the cherry tomatoes and cook for another 5 minutes.

Meanwhile, cook the pasta in plenty of salted water according to the instructions on the package.

Drain the pasta al dente, reserving some of the cooking water, and add it to the vegetables in the pan. Add a bit of the cooking water and sauté everything for a few minutes.

Adjust the salt and pepper to taste. Serve hot with grated Parmesan cheese if desired, or garnish with a few basil leaves.
